Garam Masala Buttercup Squash Fry Recipe

This tasty recipe features buttercup squash cubes cooked in a garam masala and caramelized onion sauce - great with rice, dhal and a curry.

Serves 4

INGREDIENTS:

4 tbsp. butter, melted

4 large onions, finely chopped

1 clove garlic, crushed

1 tsp. salt

1 tsp. black pepper

1 tbsp. garam masala

1 lb. buttercup squash, peeled, deseeded and cut into 1/2 inch chunks

METHOD:

Heat butter in a pan and fry onions for 10 minutes until caramelized and disintegrating. Add garlic, salt, black pepper and garam masala. Heat for 2 minutes until the aromas become strong.

Add buttercup squash chunks and cook for 15 minutes until soft, but tender. Serve hot on rice with lentil dhal, naan bread and a vegetable curry.
