Hearty Potato And Egg Salad Recipe

This wonderful potato salad recipe is perfect served with hot or cold meats. At any gathering it's sure to be a hit. The secret is in the dressing!

From pot luck suppers, picnics and barbecues, to elegant buffets and formal dinner parties, this potato and egg salad is sure to be a gigantic hit. But be prepared, if you show up toting this salad, you'll have to bring it again and again. And if you serve it at home, you're sure to be asked for the recipe. What makes this salad different? The Secret is in the dressing and the presentation.

Hearty Potato and Egg Salad

Ingredients:

4 large potatoes

4 extra large hardboiled eggs

4 tablespoons mayonnaise

1 1/4 teaspoons French's Mustard

1/2 apple (preferably red)

sugar

milk

salt

pepper

paprika

Method: Peel, slice and boil potatoes until very tender. Drain and mash (or dice if preferred). Chop 3 of the eggs into bite-sized pieces and add to potato. Add salt and pepper to taste. Refrigerate for 1 hour.

In container with lid (glass jar works great) hand whip mayonnaise and mustard together. Gradually add enough milk to make mixture creamy and smooth but not too thin. Add sugar and continue mixing. Dressing should be very pale yellow. Cover container. Shake dressing and cool in refrigerator.



Chop apple very fine (leaving peel on.) Add apple to potato and eggs. Slowly add dressing until potatoes are moist and holds together well. Pile into large bowl. With wooden spoon spread salad evenly into bowl and spread generously with dressing. Slice remaining egg lengthwise. Separate yoke and set aside. Slice egg white into small slivers and decorate top of Salad. Top with finely crumbled egg yoke. Drizzle dressing over egg. Sprinkle generously with paprika. Cover with foil or plastic wrap and refrigerate. Pour remaining dressing into attractive container and add to serving area. Serves 6-8

This salad makes a great supper salad served with homemade baked beans and hot rolls. Or serve with cold meats and rolls.

*note: Heinz Salad Cream English Dressing may be substituted for homemade dressing.
