There are numerous hiking trails including many coastal trails and hiking trails in Big Sur. If you contact the Big Sur State Parks Department, they will send you a trail map and information on the hiking in Big Sur. There is a really popular area called Point Lobos, which is just south of Carmel and has some great trails both on the coast and in the forested areas. There is another popular park called Garland Park, which is inland and it's great for hiking and also horseback riding. Monterey has a great recreation trail that follows the waterfront. It's paved and is great for biking, roller blading, skateboarding, and jogging. It's really pretty because it goes along the Monterey Harbor and the coastline. The recreation trail would be great for the casual traveler who wants to walk short distances and then there are the more strenuous hikes in Big Sur and Garland Park.
