Kebab Recipe: Super Sausage And Veggie Surprise

This super sausage and veggie surprise kebab recipe uses cocktail sausages and lots of thick chunky vegetables in a zesty marinade, for a great family meal.

This healthy, fast and easy to make vegetable and meat skewer kebab grill recipe makes a picnic or barbecue lunch, party favorite or dinner. This recipe serves 4.

INGREDIENTS:

8 oz. cocktail sausages

2 oz. button mushrooms

2 oz. zucchini, cut into 1/2 inch pieces

2 oz. red, green and orange peppers, deseeded and cut into 1/2 inch squares

2 oz. shallots, peeled

1 onion, coarsely chopped

½ cup sunflower oil

1 cup natural yogurt

2 tbsp. Balti sauce (found in East Indian section of supermarkets)

½ tbsp. lemon juice

a green salad to serve

naan bread to serve

METHOD:

Combine onion, oil, yogurt, Balti sauce and lemon juice. Add cocktail sausages and vegetables. Coat thoroughly. Cover and chill for 5 hours.



Preheat grill to hot. Using metal skewers, pierce centers of each piece until full. Balance skewers on a grill pan and cook for 5 minutes each side, or until juices run clean. Serve hot with a green salad and naan bread.
