Quality knives are sharp. That may seem obvious, but I think people who are used to older, dull knives forget that fact when they start using new ones. You shouldn't have to force your knife through food. A quality knife is so sharp and agile that it sometimes feels like it's doing the work for you. I truly believe that a sharp knife is the safest knife, because you don't have to force it through the food and are less likely to force the blade onto your finger. People often show us their bandaged fingers, because they were so excited to get their new Cutco set that they weren't careful when cutting their chicken. When you're used to an old, dull knife, you do forget.
