You could ride in an airboat to go see alligators, manatees, and waterfalls. You could go hiking, picnicking, playing tennis, or even go horseback riding. One of the most well known biking trails in Orlando is the West Orange Trail. You can rent a bike or bring your own. The trail is 19 miles of paved trail that's part of the nationwide rails-to-trails program. They have all been converted from old railways into bicycle trails. You could even rent roller blades if you'd like.
Central Florida has literally hundreds of lakes, springs, and spring-fed rivers. You can go fishing, take a tour of a lake, or just be lazy in a canoe. There is a place called Crystal River which rents equipment. If you don't have a lot of experience, they will actually teach you how to snorkel or go scuba diving.
