Easy pesto recipe that you can make in your food processor.
Ingredients:
2 & ¼ cups fresh basil leaves, washed and air dried
¼ cup pine nuts
½ cup olive oil
2 large cloves of garlic
1/3 cup freshly grated parmesan cheese
a pinch of salt
Equipment:
Food processor
All you need to do is to place the above ingredients in a food processor and blend till it reaches the consistency that you are looking for. Toss with pasta.
Nowadays, people use other herbs to make pesto. You can even try a mix of basil and thyme. If you are lactose intolerant, you can substitute the parmesan cheese with one that is made from soy. Did you just make too much pesto? Bear in mind that you can freeze what you don't use. Just place the pesto into zip lock bags and pop it into the freezer.
