The cream cheese and strawberry filling make this pumpkin roll taste delicious.
3 eggs
2 teaspoons cinnamon
1 cups sugar
1 teaspoon ginger
2/3 cup pumpkin
1/2 teaspoon nutmeg
3/4 cup flour
1 teaspoon baking powder
Preheat oven to 350 degrees.
Beat eggs and sugar until thoroughly blended. Add pumpkin and dry ingredients, mixing well. Pour into an ungreased, cookie sheet. Bake for 15 minutes. Place on damp dish towel and roll up. Place in refrigerator to cool.
Filling:
8 ounce package cream cheese
1 tablespoon strawberry jam
3 tablespoons butter
1 cup powdered sugar
1 teaspoon vanilla
Mix all filling ingredients together until smooth. Unroll chilled pumpkin roll and spread the filling on it. Reroll.
To make cutting easier wash knife after each slice.
