Quick And Easy Recipes For Picky Eaters

Mom of 3 of the pickiest eaters has some quick and easy menu ideas that can save YOU time and fuss!

When my oldest, at two, refused to eat anything but cheezits and vienna sausages, I thought that was the sign of a picky child. When at four she would balk at almost everything I tried to serve going by the WIC and nutrition book guidelines, I knew I had to figure something out and quickly.

Through trial and error with not only her, but her brother and later new sister, I came up with some quick and easy PICKIEST EATER menus that they still ask for, even though the oldest is now married and feeding a very picky husband! (Revenge!)

I have yet to see a child who does not like macaroni and cheese. It is quick and easy and very inexpensive, but sadly, not healthy in large portions, and some kids would live on it.



So, I adapted to serving lots of pasta, which is healthy, but limiting the cheese and fats that make things taste so good by trying out soups and sauces and my kids love them all.

One of our family favorites we just call "Pasta and Meat Sauce". I used to simmer a home-made sauce for hours, adding garlic and bay leaves and fussing and fidgeting. Once I got to cooking as a "MOM", the fuss and fidget did not fit into any schedule I had, so I improvised.

Now I just brown ground chuck (it is a little more expensive but so much leaner you not only have the health benefit with this cut of meat but you would be throwing out half of the hamburger anyway as fat!), drain it, add tomato sauce and stir in some parmesan cheese and simmer that. I cook noodles, usually mostacolli or shells for this bunch, and that is IT!

Our next and really healthy meal (shhhhh, do not tell your kids!), is taking chicken, can be whole chicken, peices, skinless breasts, or whatever, bake it until just almost done, drain the fat, add 2 large or 4 small cans of cream of mushroom soup and egg noodles, 12 or 16 oz. works well with a whole chicken. Simmer this until the noodles are done. Takes maybe ten minutes of actual "work" and your oven or crock pot does the rest. This one is fit for company and no one needs to know it was cheap, quick and so easy!

One more that goes over big here is "Pasta Bake".

I cook the pasta and brown the meat, drain them both, put a small can of tomato sauce on the bottom of a bake pan, add the meat and noodles once they are cooked and drained, top with more sauce and mozzarella cheese and bake for 30 minutes. You can also add cottage cheese and/or parmesan and sometimes I throw in a can or jar of mushrooms. Very healthy and makes a beautiful casserole.
