Rabbit Kebab: Blueberry & Leek Recipe

Blueberry & leek rabbit kebab recipe is marinated rabbit cubes and leeks chunks in a fruity blueberry sauce. For a great evening meal try with rice, chutney and a salad.

This healthy, fast and easy to make vegetable and meat skewer kebab grill recipe makes a picnic or barbecue lunch, party favorite or dinner. This recipe serves 4.

INGREDIENTS:

8 oz. boneless and skinless rabbit meat, cut into 1/2 inch cubes

8 oz. leeks, washed and cut into 1/2 inch thick slices

1 onion, coarsely chopped

½ cup sunflower oil

1 cup port

1 cup apple juice

½ cup blueberries, puree

a spinach salad to serve

soft crusty rolls to serve

METHOD:

Combine onion, oil, port, apple juice and blueberry puree. Add rabbit and leek pieces and coat thoroughly. Cover and chill for 5 hours.

Preheat grill to hot. Using metal skewers, pierce centers of each piece until full. Balance skewers on a grill pan and cook for 5 minutes each side, or until juices run clean. Serve hot with a spinach salad and soft crusty rolls.
