Ingredients, Recipe and Preparation information on how to make Baked Cod Fillet, a supper dish. Includes simple variations for more adventurous cooks.
BAKED COD FILLET
Cooking Time :- 15 - 20 mins.
Preparation Time :- 5 mins.
Main Cooking Utensils :- Covered Ovenproof dish,
saucepan.
Oven Temperature :- 400 degrees fahrenteit,
gas mark 6.
Oven Position :- Centre.
For 4 people you need :-
1 - 1.5 lbs Cod fillet
a little butter
Seasoning
a little lemon juice
1/8th pint of milk
For the White Sauce :-
1 oz Margarine
1 oz Flour
Fish Liquid
Milk
Seasoning
A pinch of nutmeg
To Garnish :-
Chopped Parsley
Sprigs of Parsley
Recipe :-
1. Wash and skin fish, cut into 4 pieces.
2. Put into buttered ovenproof dish.
3. Season well, and sprinkle with lemon juice.
4. Pour milk round fish, cover with lid or foil
and bake for 15 to 20 mins.
5. Melt margarine in pan, stir in flour.
6. Cook without browning for 1 minute.
7. Drain liquor from fish and add enough milk to
make 1/2 pint.
8. Stir liquid into margarine and flour mixture,
bring to boil, and cook for 1 minute,
stirring. Add seasoning and nutmeg.
To Serve :-
Put fish on serving dish, coat with sauce, sprinkle with chopped parsley and sprigs of parsley. Serve with baked tomatoes.
To Vary :-
Flavour Sauce with grated cheese or anchovy essence or chopped shrimps or chopped hard boiled egg.
