2 cups zucchini, shredded
4 eggs
3/4 cup oil
1 3/4 cups sugar
3 tablespoons vanilla
3 cup flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons cinnamon
1 cup rasins or nuts
Mix zuchini and sugar. Add eggs, oil and vanilla. Add dry ingredients. Spoon into 2 loaf pans. Bake at 350 degrees for 1-1/2 hours.
