You will see some TV chefs sharpen their knives a couple of times during a show. It's up to you. Straight-edged knives go dull faster than serrated-edged ones. You can sharpen straight-edged knives with a hand sharpener that comes with the set, or you can also send them back to the factory to be sharpened for you. Since our knives have a lifetime guarantee, we don't charge for sharpening. There is a shipping charge of around $8, though. I'm honestly not familiar with the sharpeners that come on the backs of can openers, but if you're going to pay $900 for a set of knives, it will come with a sharpener. We only sharpen our own knives, so you don't need to keep your receipt to send one back. We'll recognize it. Recessed-edge knives are specific to Cutco. It's not just a serrated edge. It has a very specific design that you cannot run through a straight-edged sharpener or have sharpened by an independent service or you will just wind the edge down and ruin it. We reapply that edge by hand on a stone wheel that has that exact pattern.
