The delicious sweet potato pie recipe is a traditional southern dessert that is for great holiday eating at Thanksgiving or Christmas.
3 eggs, beaten
1 cup brown sugar
2/3 cup milk
½ teaspoon nutmeg
1¼ teaspoon cinnamon
½ teaspoon ginger
¼ cup lemon juice
2 tablespoon butter, melted
2 cups cooked mashed sweet potato
9 inch, unbaked pie shell
Preheat oven to 375º.
Combine eggs, brown sugar, milk, nutmeg, cinnamon, and ginger, mixing well. Blend in lemon juice and butter. Add sweet potatoes and whisk to blend well. Pour mixture into the pie shell and bake for 50 minutes.
