A recipe for baking rock cakes for 16 to 18 cakes. This includes the cooking time, preparation time, main cooking utensils oven temperatures, oven position.
Treacle Rock Cakes
Cooking Time: 15 -18 mins.
Preparation Time: 10 mins
Main Cooking Utensils: 2 - 3 Baking Tray or sheets
Oven Temperature: *Moderately hot, 400°F, Gas Mark 6
Oven Position: Above Centre
For 16 - 18 cakes you will need:
10oz self raising flour (with plain flour 2 ½ level teaspoons baking powder)
4oz butter
1oz soft brown sugar
3oz sultanas
1oz crystallised peel
2 eggs
2 tablespoons black treacle
½ oz flaked almonds
1. Sieve flour or flour and baking powder.
2. Rub in butter until like fine bread crumbs. Add sugar, fruit and finely chopped peel.
3. Stir in beaten eggs and treacle.
4. Mix into dry ingredients with a fork.
5. Spoon in small heaps on the well greased baking trays, sprinkle with flaked almonds.
6. Bake for time and temperature given, until firm and golden brown.
7. Lift carefully on to wire cooling tray for the cakes are fragile when hot.
To serve: With tea or coffee.
To Vary: Use chopped dates instead of sultanas.
To Store: Better eaten fresh.
